Ingredients

  • 1 whole chicken (about 1.5 kg)
  • 2 lemons, quartered
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Fresh herbs (such as rosemary or thyme)

Instructions

  1. Begin by cleaning and patting dry the whole chicken.
  2. Preheat the Dutch oven over medium heat.
  3. Season the inside of the chicken with salt, pepper, and herbs of your choice.
  4. Stuff the cavity with lemon wedges and additional herbs.
